All this talk about pineapples, combined with the warm weather on the west coast got me experimenting last week with a new recipe.

Before I dive into what makes up the creation of my new ‘Pineapple Express’ super food shake, let’s start with a few basics.

Whenever I set out to make a healthy and tasty super food shake, it begins with a cruciferous vegetable. Think kale, spinach or Swiss chard.

It’s just that simple. Outside of including at least one cruciferous vegetable I have no rules. Remember that too many fruits can have an adverse effect and create a sugar overload so be careful. If you want to get all hopped up on sugar, grab some frozen yogurt on your way home from work.  If you want to live a life of Super Immunity, keep reading.

When fruits and vegetables are balanced you can create something that’s not only incredibly good for you, but tastes awesome.

Let’s get down to business. Here is the recipe to my new creation – ‘Pineapple Express’

Pineapple Express Shake

  • Pineapple – 2 cups
  • Spinach – 2 cups
  • Carrots – 1 cup
  • Blueberries – 1 cup
  • Apple – 1 chopped
  • Banana – 1
  • Raisins – ¼ cup (optional)
  • Walnuts – ¼ cup
  • Almond milk – 1 cup
  • Water – 3 cups


Most pineapples are quite large which is why I usually add quite a bit. I put the rest in the fridge and usually go back to back with another Pineapple Express the next day!

While carrots might not be an obvious choice for any shake, they really don’t throw off the taste at all, add good texture and, of course, are extremely healthy. Don’t forget the walnuts as they contain a good amount of alpha-linolenic acid one of the best forms of omega-3 fats.

Pineapples are rich in antioxidants which as we know fight free radicals in the body, preventing cell damage and numerous diseases.

Pineapples boost your immune system instantly and pack 131% of your daily suggested Vitamin C in just 1 cup. Pineapples contain a significant amount of bromelain which has been proven to improve protein digestion, reduce inflammation and treat indigestion.

So while we all can’t be living it up at Del Boca Vista every day, we can still enjoy a smoothie that will take you there for a few minutes!
